This is my favourite simple vegan cookie recipe! They're truly scrumptious and so easy to make - once you've learnt how to bake them, you'll be making batch after batch!
Ingredients

110g Vegan Butter (There are lots of brands so take your pick but we like Vegan Block by Naturli)

200g Sugar

1 tbsp Cornflour Mixed With 1tbsp Water

1tsp Vanilla Extract
-
180g Plain Flour
-
Pinch of Salt
-
1/2tsp Baking Powder
-
1/2tsp Bicarbonate of Soda

25g Cocoa Powder
-
200g Cocoa Loco Dark Chocolate Couverture
Directions
Preheat oven to 180c (160c fan).
Cream together the vegan butter, sugar and vanilla, then add the cornflour mixture and mix.
Add the rest of the ingredients and mix until thoroughly combined and a dough is formed.
Roll the dough into balls (you can make these whatever size you like, we make ours about 80g and this makes 10 cookies).
Place the cookie balls onto a greased baking sheet with plenty of space between them and squash them down with your hand or a fork.
Bake the cookies for about 12-14 minutes (slightly less if you are making smaller cookies) and allow to cool slightly before transferring to a cooling rack.
These cookies can be stored for 4-5 days (but they never last more than a day in our house!).
